Located within the iconic Drakes Hotel, on Brighton seafront, Dilsk is the first joint venture from chef Tom Stephens and front of house manager Madeleine Riches, who between them boast an impressive 40 years industry experience.
Dilsk offers two tasting menus, a shorter and fuller option and a set lunch menu.

The concept; a refined and flavour led journey, exhibiting restrained modern technique founded in classical methodology, fuelled by the abundance of quality produce surrounding us, from the rolling South Downs to the English Channel.
Running alongside the tasting menu is an optional wine pairing, created by Maddy and designed to work harmoniously alongside every course. There is also a non-alcoholic pairing, extensive wine list and creative cocktail menu.
Having previously worked for 4 years with Great British Menu winner, Michael Bremner at 64 Degrees fine dining restaurant, both Maddy and Tom will be utilising their strong relationships with small, local suppliers.
Tom, was born in Winchester, Hampshire. Spending much of his youth on his grandparents' farm his passion for cooking bloomed working alongside his grandmother, also a keen horticulturist.
After rounding off his training under Michelin starred Tom Kerridge and Steve Drake, a focus in the pastry kitchen led him to Limewood House Hotel. M

After rounding off his training under Michelin starred Tom Kerridge and Steve Drake, a focus in the pastry kitchen led him to Limewood House Hotel. Moving onto Head Pastry then Head Chef at the Aviator Hotel by TAG.
Heading to London In 2014 saw Tom head up the pastry section and Sous Chef positions at Pied a Terre restaurant under Marcus Eaves and opening Fera at Claridges as Sous Chef for Simon Rogan.
Since moving to Brighton in 2019, after a year travelling South East Asia, Tom was solidly planted behind the counter as Head Chef of the renowned 64 degrees before opening Dilsk in May 2023.
